The best christmas cookie recipe: spitzbuben (jam filled cookies)
Today's Topic: Spitzbuben is one of the most delicious Christmas cookie recipes you'll ever try. They are made from citrus zest-infused dough and a jam layer in between the cookies. And today I'll share my grandma's original recipe with you.
If you have been wanting to try a new Christmas cookie recipe I can only recommend these traditional German Christmas cookies which we call "Plätzchen". There are many different kinds but the Spitzbuben is definitely one of the more popular kinds.
So here is the original Christmas Cookie Recipe for my Grandma's Spitzbuben
HERE'S WHAT YOU'LL NEED:
INGREDIENTS
- 300g (2 ½ cups) all-purpose flour
- 100g (½ cup) sugar
- 1 packet (about 1 tbsp) vanilla sugar or substitute with vanilla extract (1 tsp)
- Grated zest of 1 untreated lemon (organic recommended)
- 200g (7 oz) cold butter, cut into small pieces
- 1 large egg
- 170g (6 oz) red currant jam or raspberry jam
- 250g (2 cups) powdered sugar
INSTRUCTIONS
- Prepare the Dough
- Pile the flour, sugar, vanilla sugar, and diced butter on a clean work surface.
- Make a well in the center and add the egg. Mix everything together thoroughly, then knead it with your hands into a smooth shortcrust dough.
- Chill the Dough
- Wrap the dough in plastic wrap (cling film) and refrigerate for 1 hour.
- Preheat the Oven
- Preheat the oven to 180°C (350°F).
- Roll Out and Cut
- On a lightly floured surface, roll out the dough to a thickness of 3–4 mm (1/8 inch).
- Use cookie cutters to cut out rectangular or round shapes in various sizes. Ensure you have an equal number of large and small cookies for layering.
- Bake the Cookies
- Place the cookies on a baking sheet lined with parchment paper.
- Bake in the oven on the middle rack for 10–12 minutes, until they are just lightly golden (not too brown).
- Assemble the Cookies
- While still warm, spread a small amount of jam on the larger cookies. Place the smaller cookies on top, gently pressing so the jam peeks through the center.
- Cool and Finish
- Allow the cookies to cool completely.
- Dust with powdered sugar before serving.
If you try this recipe let me know how you like the cookies! If you want to switch it up you can also use orange zest if you prefer. I tried this last week and actually loved it even more than the traditional lemon zest.
