My Omi (the German word for Grandma) always made a huge variety of different Christmas cookies, But ever since I was little the Vanille Kipferl was my absolute favorite. And today I will share her secret recipe with you so you can enjoy this German Christmas treat with the whole family this year.

here's what you'll need:
INGREDIENTS
- 400g Flour (about 3 1/4 cups)
- 330g Butter (about 1 1/2 cups)
- 165g Sugar (about 3/4 cup)
- 4 Egg yolks
- 200g Ground almonds (about 2 cups)
- 4 to 8 packets of vanilla sugar (about 2 to 4 teaspoons of vanilla extract if you're using that instead)
INSTRUCTIONS
- Sift the flour onto a board and add the sugar and coarsely grated almonds.
- Make a well in the center of the dry ingredients and add the egg yolks and finely chopped butter.
- Quickly knead everything together to form a dough. Shape the dough into flat sticks or rounds and refrigerate for 1 hour.
- After chilling, cut the dough into slices about 1 cm (1/2 inch) thick. Roll the slices and shape them into crescent moons.
- Line a baking sheet with parchment paper and place the crescents on top.
- Preheat the oven to 175°C (350°F) for electric ovens or to gas mark 2 for gas ovens.
- Bake the crescents on the middle rack for 10 minutes, or until they are just lightly golden.
- Carefully remove the crescents from the baking sheet, generously sprinkle with vanilla sugar, and allow them to cool.
- Store the cooled cookies in a tin box.
